This week I’m sharing my new FAVORITE snack recipe. It’s so popular at my house that I make a batch everyday!! It’s super simple, and a yummy way to utilize those CSA cucumbers !
You will need –
Large Canning Jar
Oil (I use sunflower)
Salt & Pepper (I use Pink Salt)
Slice cucumbers in thin rounds. Pack the slices into canning jar (I fill to top). Pour rice vinegar over cucumbers till almost completely covered, then finish covering with oil (I use maybe 1/4 cup or less). Add about a tablespoon of sesame seeds, and salt and pepper to taste. Put lid on jar and shake well. Let marinate in frig overnight, then enjoy!
**I re-use the “marinade” several times and just add more cucumbers (adding more rice vinegar to make sure cukes are covered)… after a few batches I discard the marinade and make a new batch.
